Chicken Lollipops

10 chicken legs
2 tsp kosher salt
2 tsp black pepper
2 tsp garlic powder
1 tbsp BBQ seasoning
1 cup apple cider vinegar
1/2 bottle BBQ sauce
1 stick of butter

Note: With the BBQ sauce any kind will do, I lean toward the sweeter variety, and about 8 oz is what you need. BBQ seasoning I recommend to be sweet and not salty.

Begin by taking the chicken legs and cut about 3/4 down the leg toward the end of the bone, cutting all tendons. If you wish, scissors can be used to trim unwanted tendons. Scrape any skin or tendons toward the small end of the leg and cut off the tip of the bone. You want the leg to be fairly clean where it’s bare.

Sprinkle evenly with salt, pepper, garlic powder, and BBQ seasoning. Place in a cooking pan with five tablespoons of butter.

Place in a pre-heated 300 degree smoker and cook for one hour.

While chicken is cooking, in a small boiler, add apple cider vinegar, BBQ sauce, and rest of butter. To make thicker, if desired, add, 1/3 cup ketchup. Allow to simmer for about 20 minutes until thick.

After one hour with the chicken, dip each leg in the BBQ sauce mixture and place on an elevated wire rack and cook for 15 minutes. Repeat process with sauce 2 more times. This should be a total of 1 hour and 45 minutes of total cook time. Remove from grill and let rest for about 5 to 10 minutes.

5-Ingredient Air-Fryer Bagels

1 cup all purpose flour
2 teaspoons baking powder
3/4 teaspoon kosher salt
1 cup non-fat Greek yogurt
1 egg

Well finally being home from my doctor’s appointment from South Alabama, we had a lazy morning and my wife cooked a recipe she found online. I believe this recipe is floating around everywhere, so I have no clue who the original creator is. She got this recipe from Skinnytaste, so you can go and look at the full recipe there as well.

The method we used was our air-fryer, that turned the bagels quite well.

Take flour, baking powder, and salt and mix together in a bowl or mixer. Add the Greek yogurt and fold into dry mixture( with a fork or other utensil) until it has a crumbly consistency but is binding together.

Take from bowl and place on a flour-dusted surface and knead until its like a putty type consistency. It shouldn’t take more than 10-15 kneads to get that result.

Divide into four equal portions and form a ball. Roll each ball to 1/2 inch to 3/4 inch thick cylinder shape and join both ends. You pretty much know the shape of the bagel, so you may have to adjust to get it the way you want it.

Coat the top with egg wash( from the one beaten egg).

Place in the air fryer at 280 degrees for 15 minutes.

You can put pretty much anything on them, but they were good by themselves! Try this.

For Weight Watcher fans each bagel was about 4 points a piece.

Back From South Alabama(and Jim’s BBQ)

A long couple of days! We are heading back to North Alabama and we are hopeful from some of the procedures that the BioDentist is going to do toward the end of the month.

While we were heading back we found a place in the middle of nowhere called Jim’s Barbecue. This apparently is a very famous BBQ joint in the Southeast here the woods. We decided to try their Big Jim BBQ sandwich and some onion rings. It was delicious!

Epcot Flower and Garden Festival-Impressions

 I had a great opportunity to attend the Epcot International Flower and Garden Festival at Walt Disney World in Florida recently. The festival included vibrant topiaries with character sculptures, garden destinations, and outdoor kitchens. I didn’t get to observe the entire festival, because it is an event you would probably want to spend a couple of days experiencing. Here are a few things I observed during the visit:

Butterfly Exhibit

I was able to observe Butterflies on the Go, that had many different varieties of butterflies.   

Topiaries

 
Throughout the park, where were many decorative flowers,caricatures and gardens. It was a beautiful display of art that was created by world class horticulturists.   

Food

 My favorite part! I was not able to try everything there, but I was able to try a few different things here are a few:

 

 

Urban Farm Eats

 

 
Watermelon Salad with pickled onions, baby arugula, feta and balsamic reduction.

This plate was a very cool and refreshing plate, that blended quite nicely.

 

 

 

 

 

 

 

 

 

 

 

 

 

Cider House

Pear cider-brined shredded corned beef with braised cabbage and pears and Branston dressing

This was probably my least favorite dish that I tried. However, it was not a terrible taste, just one that someone would need to acquire.

House-made potato and cheddar cheese biscuit with smoked salmon tartare

Probably my favorite of all the dishes I tried. The biscuit was amazing, and the smoked salmon and the crema was fantastic.

Fleur De Lys

 

Macaron Chocolat Framboise-Large raspberry macaron with chocolate fudge and raspberry jam
 A heavenly french dessert that was not too sweet. The jam was a sweet surprise in the middle.

 

 

Florida Fresh

 
Non-alcoholic watermelon cucumber slush

Cool, crisp, and refreshing. I did not know you could ever mix watermelon and cucumber! Will have to make a copy-cat at home!

 

 

Taste of Marrakesh

Harissa chicken kebab with sweet couscous salad

Spicy chicken with cool couscous, it was great! The combination is what made the dish.

 

 

La Isla Fresca

 

Jerk chicken with mango salsa,chayote and green papaya slaw with lime-cilantro vinaigrette
A great finish. I love anything mango and papaya. I also had a non-alcoholic frozen Simply Tropical Juice drink to go with it.

 

 

Conclusion

It was a great visual and culinary experience. Not all of the food was perfect, but I didn’t expect it to be.  I will, however try to create some of the recipes I have tried. This is me doing my Epcot happy dance:

  

 I enjoyed the experience, but I believe I enjoyed it more because we were able to experience it as a family.
