Simple Fried Catfish

4 catfish fillets
1 package Zataran’s seasoned fish fry
1 cup all purpose flour
1/4 tsp kosher salt
3 eggs
Vegetable oil

Mix one package of the Zataran’s fish fry (I used the seasoned 24 oz with lemon flavor) with the flour.

Whisk the eggs. Dredge the catfish in the eggs then into the dry mixture. Return to the egg mixture again then again in the dry mixture.

Heat vegetable oil to 350 degrees and cook catfish five to seven minutes or until the outside is golden and crispy. Sprinkle with a small amount of salt. Delish!

Smoked Fish Dip

4-5 ounces smoked salmon
4-5 ounces smoke sablefish
3/4 cup mayonnaise
1 tbsp cream cheese
1/2 green onion, chopped
2 tbsp fresh chopped parsley
juice of 1 whole lemon
1 tsp kosher salt
1 tsp black pepper
1 tsp garlic powder
2 tbsp coconut aminos

I ordered my fish from a company called Sizzlefish.com and got a box called the Omega 3 blast. It has an assortment of salmon and sablefish, and we decided to smoke some of it. I poured the coconut aminos over the fish, and sprinkled each one with just a small amount of kosher salt.

With a electric smoker or smoker grill, smoke the fish for 2 hours at 220 degrees using hickory wood. Take fish off the grill and allow to cool.

In a large bowl, mix fish, mayo, cream cheese, onion lemon juice, salt pepper, garlic powder, parsley and green onion together thoroughly, pressing down on the fish to break it up. Mix until all ingredients are incorporated. All dip to chill in the fridge for about an hour before serving.

Great by itself. Amazing with anything like a cracker or bread. We kept coming back for more! It was so delicious. Thank you Sizzlefish for the fish!

Faux Baked Seafood Salad

4 Fillet of Tilapia
1 Fillet of Atlantic Cod
3 Tbsp Mayonnaise
1 tsp Sriracha(optional)
2 Tbsp Panko bread crumbs(optional)
Salt and pepper to taste
Bring about half of a boiler full of water to a boil. Slice all fish into thumb size pieces and place into boiling water. Turn heat to medium and cook for 7 to 10 minutes or until fish is fully cooked. Strain water from fish and place into a mixing bowl. I would recommend letting it cool a few minutes, and also make sure the water is fully drained from the fish.
After fish has cooled, add salt and pepper, mayo, yum-yum sauce, sriracha, and mix well. It should form a very chunky/glob time consistency. Add the panko and mix.
Preheat oven to 425 degrees.  Place the fish mixture into a oven safe pan and cook on 425 for 10-15 minutes. After this time is should start becoming brown on top. Turn oven to broil and broil for 1 to 2 minutes. Keep an eye on it during this step.
Serve warm or place in fridge and chill. This goes well in a rice bowl, on top of sushi or just by itself. It is a very good “faux” seafood dish!
